Making good use of all of that garden fresh zucchini is easy to do when you use it up in this tasty sauteed zucchini dish. This recipe uses so many delicious, fresh ingredients, and is perfect for a simple summer supper side dish.

The first thing you will want to do is to gather all of the ingredients together. What is so wonderful about his fresh recipe, is that the majority of the ingredients can be found in the average home garden, or farmer's market in the late summer months. For this recipe, you will need:

  • 1 Tbsp extra-virgin olive oil
  • 1 clove garlic, minced fine
  • 1 Tbsp fresh thyme leaves
  • 1 Tbsp chopped fresh oregano
  • 1/4 tsp salt
  • 3 cups peeled zucchini, cut into 1/4-inch cubes (3 small zucchini's or one large)
  • 1 cup chopped, fresh plum tomato
