Reduced calorie mayonnaise is used along with greek yogurt which adds extra creaminess and a bit of tang. Sliced green onions add extra flavor, and nobody will know that this potato salad is low calorie unless you tell them! An extra bonus it the hard boiled eggs which add terrific texture and protein.

To get started on your low calorie potato salad, gather together the ingredients. For this recipe, you will need:

  • 1 1/2 pounds red potatoes
  • 1/4 tsp salt, divided
  • 3 eggs
  • 1/2 cup reduced-calorie mayonnaise
  • 1/4 cup whole milk greek yogurt
  • 1 Tbsp yellow mustard
  • 1/4 cup finely chopped celery
  • 1/4 cup chopped green onion
  • Black Pepper to Taste
