Sauteed Summer Squash

If you have ever grown summer squash in your garden, you know how it is sometimes difficult to come up with ways to use it all. This preparation is about as simple as it gets, and allows the delicate flavor of fresh summer squash to shine through.
Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients:
  • 1 tsp olive oil
  • 1/4 cup sliced green bell pepper (1/2 of one medium pepper)
  • 2 cups peeled, sliced yellow summer squash (1 large, sliced into 1/4-inch slices)
  • 1/4 tsp salt
  • Dash of freshly-ground black pepper
Preparation:

1. Heat the olive oil in a medium-sized skillet over medium-high heat. Add the green bell pepper slices, and saute for 1 minute.

2. Add the sliced squash, salt and pepper to the pan, and saute an additional 3-4 minutes, or until the vegetables are fork-tender. Serve immediately.
