Ingredients:
- 1 tsp olive oil
- 1/4 cup sliced green bell pepper (1/2 of one medium pepper)
- 2 cups peeled, sliced yellow summer squash (1 large, sliced into 1/4-inch slices)
- 1/4 tsp salt
- Dash of freshly-ground black pepper
Preparation:
1. Heat the olive oil in a medium-sized skillet over medium-high heat. Add the green bell pepper slices, and saute for 1 minute.
2. Add the sliced squash, salt and pepper to the pan, and saute an additional 3-4 minutes, or until the vegetables are fork-tender. Serve immediately.
