The sweetness of the apples and the crunch of the walnuts makes this apple stuffing an exciting twist on a traditional recipe. This apple stuffing nicely compliments turkey as well as pork.

Ingredients:
- 2 Tbsp butter
- 3/4 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 2 Tbsp chopped thyme
- 2 Tbsp chopped sage
- 1/2 tsp salt
- 6 cups toasted bread cubes
- 1 cup peeled chopped granny smith apples
- 1/2 cups chopped walnuts
- 1 1/2 cup vegetable broth
Preparation:
1. Preheat the oven to 350°F.
2. In a large skillet, melt the butter over medium-high heat. Add the onion, celery, and carrot and cook for 5 minutes. Remove from the heat, and add the thyme, sage, and salt.
3. In a large bowl, toss the vegetable mixture together with the breadcubes, apples, and walnuts. Add the vegetables broth, and stir until combined.
4. Pour the stuffing into a 9x13-inch pan coated with cooking spray. Cover with foil, and bake 30 minutes.
