Guacamole Hummus
Kimberley K. Eggleston
Hummus has become quite popular in recent years, and new flavors and combinations seem to be coming out all the time. This guacamole hummus dip makes a delicious combination. Combining these two tasty dips into one makes for a delicious and extra healthy dip for chips or as a topping for mexican foods.

  • 1 medium avacado, seeded with peels discarded
  • 1 15 oz. can garbanzo beans (chickpeas) rinsed and drained
  • 1/2 cup chopped fresh cilantro
  • 3 Tbsp chopped red onion
  • 2 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • 1 Tbsp water
  • 1 tsp salt
  • 1/2 tsp ground cumin

1. In a blender or food processor, combine the rinsed and drained garbanzo beans, the avacado, cilantro, red onion, lime juice, olive oil, water, salt, and ground cumin. Process until the mixture is smooth, and there are no longer any lumps in the dip. Serve immediately, or store in an airtight container in the refrigerator until ready to use, up to three days. Serve with baked tortilla chips or pita chips, or with tacos or burritos.
