This crock pot beef stew makes an excellent meal for any weeknight or weekend. Simply serve with a green salad for a delicious and hearty, yet low calorie meal.

Ingredients:
- 1 lb. top sirloin, cut into bite-sized pieces
- 3 cups of water
- 1 1/2 Tbsp minced onion
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 4 large potatoes, peeled and cute into bite sized pieces (1 1/2 lb.)
- 6 large carrots, peeled and sliced into bite-sized discs (1 lb.)
- 1 15-oz. can stewed tomatoes
- 4 cups tomato juice
Preparation:
1. Place the beef, water, and minced onion in a 4-quart crock pot, and cook on high for 1 hour. Add the remaining ingredients to the crock pot, and cook on low for 7 hours, assuring that the meat and vegetables become tender.
