Three kinds of beans and tender chunks of veggies make this meatless chili fully safisfying without the meat. Clean up is simple as this is a one-pot dish.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 2 tsp canola oil
  • 1 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrot
  • 1 clove garlic, minced
  • 1 15 oz. can red kidney beans, drained
  • 1 15 oz. can garbonzo beans, drained
  • 1 15 oz. can black beans, drained
  • 1 15 oz. can diced tomatoes
  • 2 cups chicken broth
  • 1 cup water
  • 1 Tbsp tomato paste
  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • dash ground black pepper
  • 1/4 cup reduced-fat sour cream

Preparation:

1. Heat the canola oil in a large soup pot over medium-high heat. Add the green pepper, onion, carrot, and garlic. Saute for 5-7 minutes, until vegetables become tender.

2. Add the remaining ingredients, and bring to a boil. Reduce the heat and simmer for 10 minutes.

3. Allow the chili to sit for 10 minutes before serving. Top each serving with 2 tsp sour cream.
