Ingredients:
- Ingredients for Quinoa Salad with Feta:
- 2 cups cooked quinoa
- 1/2 cup chopped, canned pickled beets
- 1/2 cup chopped cucumber
- 2 green onions, chopped
- 1/4 cup feta cheese crumbles
- 1 Tbsp olive oil
- 1 tsp red wine vinegar
- 1/4 tsp salt
Preparation:
1. In a large bowl, toss together the quinoa, beets, cucumber, feta, and green onion.
2. In a small, seperate dish, whisk together the olive oil, red wine vinegar, and salt. Pour the dressing over the quinoa salad, and toss to combine.
