Quinoa Salad with Feta

Low Calorie Quinoa Salad with Feta

This is a wonderfully refreshing quinoa salad with feta cheese, pickled beets, and fresh cucumber. It goes great with a simple dish of grilled chicken or fish, and the leftover quinoa salad makes a fantastic lunch for the next day.

  • Ingredients for Quinoa Salad with Feta:
  • 2 cups cooked quinoa
  • 1/2 cup chopped, canned pickled beets
  • 1/2 cup chopped cucumber
  • 2 green onions, chopped
  • 1/4 cup feta cheese crumbles
  • 1 Tbsp olive oil
  • 1 tsp red wine vinegar
  • 1/4 tsp salt


1. In a large bowl, toss together the quinoa, beets, cucumber, feta, and green onion.

2. In a small, seperate dish, whisk together the olive oil, red wine vinegar, and salt. Pour the dressing over the quinoa salad, and toss to combine.

This recipe was very simple to make. It turned out so well! It doesn't look like much, but the flavors and textures are a phenomenal combination. The feta cheese and red wine vinegar really distract from the sometimes overpowering flavor of beets. I was trying to incorporate more beets into my diet since they are high in potassium and can help lower blood pressure and anxiety. The only alteration I've made is to use steamed/peeled baby beets (from Trader Joe's), which I prefer to the pickled, canned beets. Try it!
