Ingredients:
- 1 cup orzo pasta
- 2 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1 tsp dried oregano leaves
- 1/8 tsp salt
- 1/8 tsp black pepper
- 2 cups chopped cooked chicken breast
- 1 cups chopped fresh arugula
- 1/2 cup halved cherry tomatoes
- 2 Tbsp chopped red onion
- 1/2 cup shredded parmesan cheese
Preparation:
1. Cooked orzo according to package directions. Drain and set aside.
2. In a small dish, combine the olive oil, red wine vinegar, oregano, salt, and pepper. In a large bowl, toss the dressing together with the orzo, chicken, arugula, tomatoes, onion, and parmesan cheese.
