Low Calorie Chicken Orzo Salad

This chicken salad with orzo pasta is a colorful and healthy summer salad, great for lunch or a light dinner. Serve with crusty bread for a complete meal.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1 cup orzo pasta
  • 2 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 1 tsp dried oregano leaves
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 cups chopped cooked chicken breast
  • 1 cups chopped fresh arugula
  • 1/2 cup halved cherry tomatoes
  • 2 Tbsp chopped red onion
  • 1/2 cup shredded parmesan cheese

Preparation:

1. Cooked orzo according to package directions. Drain and set aside.

2. In a small dish, combine the olive oil, red wine vinegar, oregano, salt, and pepper. In a large bowl, toss the dressing together with the orzo, chicken, arugula, tomatoes, onion, and parmesan cheese.

We found this dish to be very tasty. The arugula was a nice ""surprise"" flavor in the dish. It was light and perfect for a warm summer night. I served it with a home made crusty peasant bread.
