This soup came together one evening when we thought we didn't have enough ingredients to make any sort of real dinner. However, we had one andoille sausage, and some canned beans and tomatoes in the pantry and they all came together quite well for this comforting a filling soup. Not a large amount of the sausage is used, so it does not end up adding a tremendous amount of calories. The remaining ingredients are quite healthy and low in calories, making a healthy dish. To make the soup, first gather together the ingredients. For this recipe you will need:
2 Tbsp extra virgin olive oil
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
1 8 oz. andoille sausage (fully cooked)
1 tsp salt
2 tsp dried oregano
3 cups reduced sodium chicken stock
1 15 oz. can petite diced tomatoes
2 15 oz. cans white beans, drained and rinsed
