Mini Meatballs and Penne


Mini Meatballs and Penne

The only part of this meal that takes time is rolling the little meatballs. The rest comes together in a snap, and if you are quick, the meatballs go pretty fast too. Serve this dish along with a simple green salad, and a small piece of crusty bread.


  • For the meatballs:
  • 1 pound lean ground turkey breast
  • 1/3 cup dried breadcrumbs
  • 2 cloves garlic, minced fine
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil leaves
  • 1/2 tsp crushed fennel seeds
  • 1 egg
  • For the Pasta
  • 10 oz. dried penne pasta
  • 1 jar spaghetti sauce


1. Cook the pasta according to package directions until al dente. Drain the pasta and set aside until the rest of the dish is ready.

2. While the pasta cooks, prepare the meatballs. Preheat the oven to 350. Then, in a large bowl, combine together the ground turkey, the breadcrumbs, the minced garlic cloves, salt, black pepper, oregano, basil leaves, fennel seeds, and the egg. Use your hands to thoroughly mix the ingredients together. Spray a large baking sheet with non-stick cooking spray. Then, roll the meat mixture into small meatballs with about a one inch diameter. Place the rolled meatballs on the baking sheet, making sure that none of the meatballs touch. Place the meatballs in the oven, and bake for 5-7 minutes, until the middles of the meatballs are no longer pink. Remove them from the oven.

3. Heat the pasta sauce over medium-high heat in a medium-sized saucepan. In a large bowl or pan, toss the pasta together with the pasta sauce. Then, carefully stir in the meatballs until they are evenly distributed. Serve with a little sprinkle of fresh parmesan cheese if desired.
