Mom's Light Brown Biscuits

This is an old family favorite, and its original name was bran muffins because of the whole wheat flour which is used. Mistaking the word bran for "brown", the name was changed by little ones who began calling them brown biscuits, and the name stuck. This is my lightened version of this favorite recipe.

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1/3 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 egg whites, beaten
  • 1/2 cup no-sugar-added applesauce
  • 1 tsp vanilla extract
  • 1 cup boiling water

Preparation:

1. Preheat the oven to 350º.

2. In a large bowl, stir together the two flours, the brown sugar, baking soda, baking powder, and salt until well-combined.

3. To the flour mixture, add the beaten egg whites, the applesauce, vanilla, and boiling water.

4. Spray one muffin tin (a twelve muffin capacity size) with non-stick cooking spray. Fill the muffins tins about 2/3 full of batter.

5. Bake at 350º for 20-25 minutes, or until a wooden pick inserted in the middle of a muffin comes out clean.

Makes 12 muffins
