Ingredients:
- 1 1/2 cups whole wheat flour
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup chunky applesauce
- 1/4 cup canola oil
- 1 egg, slightly beaten
- 1/3 cup dried cranberries
Preparation:
1. Preheat the oven to 350°F.
2. In a large bowl, combine the dry ingredients (whole wheat flour through the baking soda).
3. Add the applesauce, oil, and egg, and stir just until combined. Fold in the cranberries.
3. Fill muffin tins about 2/3 full, and bake 350°F for 20 minutes, until a toothpick insered in the middle of a muffin comes out clean.
4. Remove muffins from tin, and allow to cool on wire racks.
