Low Calorie Blueberry Muffins

These muffins are easy to make early in the week, after which you can store them in an air-tight container. Simply grab one in the morning, even on-the-go for a quick and healthy breakfast.


  • Ingredients

  • 1 1/2 cups low-fat buttermilk
  • 1 cup oats
  • 2 Tbsp canola oil
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries


1. Preheat the oven to 350°F

2. Combine the first 5 ingredients (through vanilla) in a large bowl. Allow to soak for 5 minutes. In another bowl, combine the flour, sugar, baking powder, and salt. Add the buttermilk mixture to the flour mixture, and stir well. Fold in the blueberries.

Spray 12 muffin tins with non-stick cooking spray, and fill 2/3 full with the batter.

3. Bake for 20-25 minutes, or until a toothpick inserted in the middle of one of the muffins comes out clean.
