Low Calorie Pumpkin Pancakes

These pumpkin pancakes are like delving into a Thanksgiving pumpkin pie at breakfast time! They are wonderfully fluffy, and full of flavor. We like to serve ours with a little maple syrup and crushed nuts.

Prep Time: 10 minutes

Cook Time: 6 minutes

Total Time: 16 minutes

Ingredients:

  • 1 1/2 cups flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 egg
  • 2 egg whites
  • 1 cup nonfat milk
  • 3/4 cup canned pumpkin
  • 2 Tbsp canola oil
  • 1 tsp vanilla extract

Preparation:

1. Combine the dry ingredients in a large mixing bowl (flour through the cloves).

2. In a small dish, beat the egg and egg whites until fluffy. Add the remaining ingredients to the egg mixture, and beat until combined. Stir the egg mixture into the flour mixture.

3. Pour batter by 1/4 cup fulls onto a preheated griddle, and cook about 3 minutes, until bubbles start to appear on the surface of the pancakes. Flip the pancakes, and cook an additional 3-4 minutes, until cooked through.

For a long time I have wanted to find things to provide my kids with a healthy breakfast in the morning before school, but we never had time for a hot breakfast. When I saw this recipe, I couldn't get it out of my mind! I measured out all of the dry ingredients the night before so everything was ready for me to make these pancakes in the morning. So super easy and fast that we actually had time for a hot breakfast before school for the first time in I don't know how long! The kids LOVED them and they were very fluffy. Next time my kids have requested a little whip cream on the top because they really do taste like pumpkin pie! Delicious!
