Quick and Easy Dinner Recipes

By

It seems like everyone is busy these days, and sometimes there are just not enough hours in the day to plan and prepare a healthy dinner. Do you find yourself wondering what to cook, thirty minutes before dinner time? Or, do you find yourself so pressed for time that you are at the drive-through window, splurging on that greasy excuse for a meal? Instead, with a little planning, you can turn to these meal ideas, all ready in thirty minutes or less. Keep your pantry and refrigerator stocked with the ingredients for these five recipes, and feel secure that you'll have everything you need for a quick and healthy dinner.

Salmon is always a dinner time winner, loaded with healthy omega-3 fatty acids and lean protein. The fresh cilantro and oranges compliment each other so beautifully, creating a light and fresh topping for the peppery salmon. It takes just a short amount of time to combine the ingredients for the salsa, so this dish comes together really easily.

2. Bowtie Pasta with Fresh Tomato and Basil

This recipe uses all the best of Italy: pasta, fresh basil, tomato, mozzarella, and olive oil in a simple and tasteful main course or side dish recipe. While the pasta cooks, chop the other vegetables for the dish to save time. Fresh tomatoes are certainly the tastiest choice for this recipe. But, if you are really pressed for time, substitute one large can of diced tomatoes to help this quick dish come together even faster.

3. Taco Soup

This soup combines low calorie beans, beef, and vegetables with a spicy southwestern flare. While the beef and onions are cooking, prepare the other ingredients. Then, while the soup simmers, you can tend to other must-do tasks to make your evening a little less frazzled.

4. Garlic Pepper Shrimp

This is a recipe for garlicky sauteed shrimp, ready in a matter of minutes. Keep a package of frozen, shelled shrimp in the freezer to make this flawless meal easy to pull together any night. Pair with a green salad and Coconut Couscous, also ready in about five minutes, for a delicious meal with a little island flare.

5. Turkey and Cranberry Wrap

This is a low calorie wrap with succulent layers of roast turkey and a creamy cranberry spread. Although wraps are traditionally thought of as a mid-day meal, this can be a nice change of pace for dinner time, especially on a warm evening when heating up the kitchen is completely out of the question. Serve with a generous tossed green salad for a complete meal.
