Low Calorie Jack-O-Lantern Pie

You can really take the liberty to decorate the face of this jack-o-lantern pudding pie with any lower calorie candy that you would like. In this recipe, I used candy corns for the jagged mouth, nose, and eyes, and black licorice strips for the groves on the pumpkin and outline of the eyes.
Prep Time: 20 minutes
Ingredients:
  • 1 1-oz. package sugar-free, instant butterscotch pudding
  • 2 cups fat-free milk
  • 4 oz. lite non-dairy whipped topping (about 3 cups)
  • 1 prepared chocolate crumb pie crust
  • Various candies for decorating
Preparation:

1. Combine the pudding mix and milk in a large bowl, and stir with a wire whisk until well-combined. Add the whipped topping, and continue to mix with the wire wisk until smooth.

2. Pour the pudding mixture into the prepared pie crust, and place in the refrigerator for about 30 minutes, or until set.

3. Decorate the pie to resemble the face of a jack-o-lantern using candies such as candy corns and black licorice strips.
