Coconut Couscous

Couscous is actually a semolina pasta that originated in northern Africa. It makes a wonderful and quick side dish as it cooks in about 5 minutes, and can be combined with a wide variety of vegetables, fruits, or nuts. This recipe is very simple, using coconut milk as part of the cooking liquid and a small scattering of green onion.
Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients:
  • 1 cup light cocunt milk
  • 1/2 cup water
  • 1/4 tsp salt
  • 1 cup uncooked couscous
  • 1 green onion, chopped (about 2 Tbsp)
Preparation:

1. Pour the coconut milk, water, and salt into a medium-sized saucepan. Bring the mixture to a boil over medium-high heat.

2. Pour the couscous into the coconut milk mixture, remove from the heat, cover the pot with a lid, and allow it to sit for 5 minutes.

3. Add the chopped green onion to the couscous, and fluff with a fork.
