Fresh tarragon can be easily found in your local supermarket, with its smooth, lance-shaped, green leaves being the most flavorful and useful part of the plant for use in seasoning. The flavor resembles that of anise, or licorice, and can be rather strong, so you will want to use the herb sparingly in your recipes. Tarragon is a nice enhancer for poultry, seafood, fruits, eggs, and vegetables. It is also a key ingredient in bernaise sauce.
The dried version is easily found in the herbs and spices aisle at the grocery store, though the flavorful oils disipate greatly in the dried version, so differs quite a bit in flavor from the fresh variety.
