Cajun Spiced Pork Tenderloin Medallions

Although the instructions in this recipe call for baking the pork in the oven, these spicy medallions could easily be grilled on an outside barbeque grill, if preferred. Serve with crispy oven fries and coleslaw for a complete meal.
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
  • 1 large pork tenderloin (2 pounds)
  • 1 Tbsp ground Cajun Seasoning
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
Preparation:

1. Preheat the oven to 400ºF.

2. With a sharp knife, remove the thin silvery skin from the pork tenderloin. Discard the thin skin. Slice the pork tenderloin into medallions, about 1-inch thick.

3. Place the cajun seasoning, garlic powder, and black pepper in a large ziplock bag. Add the pork tenderloins, and shake well to coat.

4. Coat a large baking sheet with cooking spray. Place the pork medallions in a single layer on the baking sheet. Bake for 20 minutes, turning once, until they have reached desired degree of doneness.
