Low Calorie Upside-Down Ginger Cake Kimberley K. Eggleston
A delicate ginger streusel topping lends an aromatic flavor to this beautiful upside-down cake.

Ingredients:

  • 1/4 cup brown sugar
  • 2 Tbsp fresh ginger, minced fine
  • 1 Tbsp butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup butter, softened
  • 3 egg whites
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3/4 cup buttermilk

Preparation:

1. Preheat the oven to 350°F.

2. Coat a 9-inch round cake pan with non-stick cooking spray. In a separate, small dish, combine the brown sugar, fresh ginger, and 1 tablespoon of melted butter. Spread this mixture on the bottom of the cake pan.

3. In a large mixing bowl, cream together the granulated sugar and softened butter. Add the egg whites and vanilla, and mix well.

4. In a separate bowl, combine the dry ingredients (flour through salt). Add the flour mixture and the buttermilk alternately to the egg mixture, a little at a time. Stir the mixture with each flour and buttermilk addition. Pour the batter into the cake pan, on top of the brown sugar mixture.

5. Bake for 35-40 minutes, or until a toothpick inserted in the middle of the cake comes our clean.

6. Allow the cake to cool in the pan for 5 minutes, then turn it out onto wire racks to cool completely.
