Low Calorie Chocolate Mint Cookies

Mint-flavored chocolate chips can be found in the grocery store around holiday time. If you have a hard time tracking down the mint chips, however, this recipe is equally as delicious using semi-sweet chocolate chips or peanut-butter chips.

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 5 Tbsp butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup mint chocolate chips

1. Preheat the oven to 350°F.

2. In a large mixing bowl, combine the dry ingredients (flour through salt).

2. In a seperate bowl, cream the butter and sugar together on high speed for 2 minutes. Add the egg and vanilla, and beat until well combined. Add the flour mixture, 1/4 cup at a time, and mix until combined. Fold in the mint chips.

3. Drop the dough by teaspoon-fulls onto a large baking sheet coated with cooking spray.

4. Bake for 10-12 minutes, or until no longer doughy. Cool completely on a wire rack.

The Perfect Combo, Member Amayazing

If you have not tried this recipe, it is an absolute recipe to die for! Instead of using mint chocolate chips, I actually used mint M&Ms. The dough itself is very stiff and so I made it into candy canes and it didn't even spread out and kept its shape. This recipe is the perfect combination of chocolate and mint, along with being absolutely scrumptious! It was a great combination of crunchy and soft. This has now become my favorite recipe for the holiday season and this recipe will make you want not only seconds but thirds and fourths! It is so easy to make and why not have fun with the kids into making them into holiday shapes? You certainly won't regret this recipe at all! Enjoy! :)
