Ingredients:
- 2 Tbsp chopped walnuts (1/2 oz.)
- 2 medium-sized anjou pears, halved and cored
- 1/2 cup orange juice
- 1 Tbsp plus 1 tsp brown sugar
- 1/8 tsp ground cinnamon
- Dash of salt
- 1/4 cup pitted, chopped dates
- 2 Tbsp raisins
Preparation:
1. Preheat the oven to 375°F.
2. Spread the walnuts evenly in a single layer on a small baking sheet. Bake for 3-4 minutes, or until lightly toasted. Set aside.3. Place the orange juice, brown sugar, cinnamon, and salt in a small saucepan, and heat over medium high heat until small bubbles begin to break the surface. Continue to cook for two minutes, stirring constantly with a wire whisk, until slightly thick. Add the dates, raisins, and walnuts. Remove from heat.
4. Place the pears, cored side up, in a single layer in a small baking dish. Spoon the fruit mixture evenly into the cored portion of each pear. Drizzle with the fruit syrup, reserving 2 Tbsp of syrup for garnishing after the pears have baked.
5. Bake the pears for 15 minutes at 375°F.
6. Drizzle the reserved syrup evenly over the pears.
