Ingredients:
- 3 cups 2% milk
- 1/4 cup sugar
- 3 Tbsp corn starch
- 1/8 tsp salt
- 3 oz. semi-sweet chocolate, chopped
- 5 mini chocolate peanut butter cups, chopped
Preparation:
1. Place 2 1/2 cups of the milk in a heavy-bottomed saucepan, and bring to a simmer over medium-high heat. Whisk together the remaining milk, corn starch, sugar, and salt in a separate dish. Add the sugar mixture to the milk mixture, and cook 2 minutes until thick, stirring constantly. Remove from heat, and add the chopped chocolate. Stir until the chocolate melts.
2. Place the ice cream mixture in a bowl. Place this bowl in a larger bowl filled with ice water. Cool completely. Stir in the chopped peanut butter cups.
3. Place the ice cream mixture in the can of an ice cream maker, and freeze according to manufacturer's instructions. Serve immediately for a softer-serve ice cream. Alternatively, you may freeze the ice cream in a freezer-safe container in the freezer for several hours for a hard ice cream.
