Ingredients:
- 1/4 cup chopped green pepper
- 1/4 cup chopped onion
- 1 large egg
- 3 large egg whites
- 1 Tbsp skim milk
- dash of ground black pepper
- 1/4 cup diced lean ham (1 ounce)
- 1/4 cup shredded sharp cheddar cheese
- 1 tsp ketchup
Preparation:
1. Heat a small non-stick skillet over medium-high heat. Cook the green pepper and onion for 3 minutes, or until vegetables are tender. Set the vegetables aside.
2. In a small bowl, whisk together the egg, egg whites, milk, and black pepper. Heat the skillet over medium-high heat, and coat with cooking spray. Pour the egg mixture into the pan, coating the entire bottom of the pan. Allow to cook for 2 minutes. Next, sprinkle the vegetables, ham, and cheese on one half of the omelet. Then, using a spatula, fold one end of the omelet over the other, enclosing the vegetables, ham, and cheese inside. Continue cooking for 2 more minutes, until egg is fully cooked through.
4. Slide the omelet onto a plate.
