Serve this western omelette alongside a serving of whole wheat toast for a hearty breakfast or brunch.

Prep Time: 5 minutes

Cook Time: 7 minutes

Total Time: 12 minutes

Ingredients:

  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 large egg
  • 3 large egg whites
  • 1 Tbsp skim milk
  • dash of ground black pepper
  • 1/4 cup diced lean ham (1 ounce)
  • 1/4 cup shredded sharp cheddar cheese
  • 1 tsp ketchup

Preparation:

1. Heat a small non-stick skillet over medium-high heat. Cook the green pepper and onion for 3 minutes, or until vegetables are tender. Set the vegetables aside.

2. In a small bowl, whisk together the egg, egg whites, milk, and black pepper. Heat the skillet over medium-high heat, and coat with cooking spray. Pour the egg mixture into the pan, coating the entire bottom of the pan. Allow to cook for 2 minutes. Next, sprinkle the vegetables, ham, and cheese on one half of the omelet. Then, using a spatula, fold one end of the omelet over the other, enclosing the vegetables, ham, and cheese inside. Continue cooking for 2 more minutes, until egg is fully cooked through.

4. Slide the omelet onto a plate.

Love it, Delicious, Member lovenow

I have never been good at making omelettes, however since making this omelette, I can not say that again. I followed the recipe exactly and the omelette was delicious. I definitely plan to cook it for my boyfriend and friends.
