Ingredients:
- 1 slice turkey bacon
- 1/4 cup onion, chopped fine
- 1 large egg
- 2 large egg whites
- 1 Tbsp skim milk
- dash of black pepper
- 1/4 cup shredded swiss cheese (1/2 ounce)
Preparation:
1. Heat a small non-stick skillet over medium heat. Cook the bacon for 5 minutes, or until crisp. Crumble, and set aside.
2. Reduce heat to low, and in the same skillet, cook the onion for about 10 minutes, or until soft and caramel colored. Remove the onions from the pan, and set aside.
3. In a small bowl, whisk together the egg, egg whites, milk, and black pepper. Heat the skillet over medium-high heat, and coat with cooking spray. Pour the egg mixture into the pan, coating the entire bottom of the pan. Allow to cook for 2 minutes. Next, sprinkle the bacon, onion, and cheese on one half of the omelet. Then, using a spatula, fold one end of the omelet over the other, enclosing the bacon, onion, and cheese inside. Continue cooking for 2 more minutes, until egg is fully cooked through.
4. Slide the omelet onto a plate.
