Low Calorie Shrimp Appetizer Skewers

String the teriyaki shrimp and pineapple on smaller skewers to serve as an appetizer at your next party, or string a greater amount of them on a longer skewer to make an easy, low calorie meal.

Prep Time: 5 minutes

Cook Time: 4 minutes

Total Time: 9 minutes

Ingredients:

  • 1/4 cup teriyaki sauce
  • 1 Tbsp fresh lime juice
  • 2 garlic cloves, minced fine
  • 2 tsp brown sugar
  • 1 lb. fresh shrimp, peeled and devined
  • 1 1/2 cups pineapple chunks

Preparation:

1. Prepare the marinade by combining the teriyaki sauce, lime juice, garlic, and brown sugar in a small bowl. Place the shrimp in a large plastic bag, and add the marinade. Allow the shrimp to marinate in the refrigerator for 1 hour.

2. Preheat the broiler. Alternately string the pineapple and shrimp onto each of 8 skewers. Place the skewers on a broiler pan, sprayed with non-stick cooking spray.

3. Broil the shrimp for 3-4 minutes, or until they are pink, and no longer opaque.
