Spicy Black Bean and Corn Salsa

Serve your friends and family this spicy, low-calorie appetizer at your next gathering with crispy baked tortilla chips. You need not divulge that not only was it incredibly easy to prepare, but is also very healthy with its high fiber and low calorie content. Save the leftovers for a nutritious, filling snack.

Prep Time: 15 minutes

Ingredients:

  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 1 cup seeded, chopped tomato (1 med)
  • 1/4 cup chopped, fresh cilantro
  • 2 green onions, chopped (1/4 cup)
  • Juice of one lime (about 1/4 cup)
  • 1/4 tsp ground cumin
  • 1/8 tsp salt

Preparation:

1. Combine all ingredients in a medium-sized bowl.

2. Cover and chill until ready to be served. Serve with baked tortilla chips.
