Kimberley Eggleston, R.D., is a former writer for The Spruce for almost eight years. Kimberley has worked the past several years in clinical practice as a registered dietitian, specializing in medical, infant, and prenatal nutrition therapy. Her main focus has been to guide individuals in leading healthier lives by cooking and eating healthful foods in their own homes. She has written curricula for and instructed community cooking and nutrition classes and has made written contributions to community health newsletters and cookbooks.
Kimberley has used her own home as a test kitchen, combining fundamental cooking techniques with nutrition expertise to create numerous unique recipes. She is constantly intrigued by finding new ways to make old recipes healthier.
Education
Kimberley earned a Bachelor of Science degree from Utah State University, specializing in nutrition and food science. She then moved on to complete a dietetic internship at Oregon Health and Science University in Portland, Oregon.
