Quiche and low calorie cooking are two words that do not appear in a sentence together very often! Quiche is usually notoriously high in calories, with flaky, buttery crusts and mounds of eggs and cheese. However, I have paired the two together by making my quiche crust out of flour tortillas, and filling the pie with more egg whites than eggs, part-skim mozzarella cheese, and a healthy dose of spinach. Thus, we achieve low calorie spinach parmesan quiche!
